Ingredients

  • 1 pound ground turkey
  • 1 tablespoon of extra virgin olive oil
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder (1/8 teaspoon if you don’t like it very spicy)
  • 1/4 teaspoon red pepper flakes
  • 1/8 teaspoon coriander
  • 15 ounces of black beans (organic, well-washed, and drained)
  • 15 ounces of pinto beans (organic, well-washed, and drained)
  • 5 plum tomatoes (chopped and seeded)
  • 1 teaspoon hot pepper (chopped, add more or something to your liking)
  • 1/2 cup frozen corn
  • 1/4 cup of low-fat Mexican cheese
  • 1/4 cup chopped fresh coriander (optional to garnish)
