- 15 ounces of black beans (organic, well-washed, and drained)
- 15 ounces of pinto beans (organic, well-washed, and drained)
- 5 plum tomatoes (chopped and seeded)
- 1 teaspoon hot pepper (chopped, add more or something to your liking)
- 1/2 cup frozen corn
- 1/4 cup of low-fat Mexican cheese
- 1/4 cup chopped fresh coriander (optional to garnish)
